Ingredients
- 4 Tbsp. olive oil
- 3 to 3 1/2 lb. chicken
- 1 c. chopped onions
- 2 fresh lemons, quartered
- 1 tsp. ground ginger
- 24 small green olives
- 1 tsp. salt
- black pepper
- 2 salted lemons, quartered
- 2 tsp. paprika
- 1/4 tsp. turmeric
- 1 c. water
Directions

1Brown chicken in oil 4 pieces at a time.

2Pour off fat and add onions, stirring frequently.

3Cook 8 to 10 minutes.

4Stir in paprika, ginger, turmeric, salt and pepper.

5Add fresh lemons, chicken, accumulated liquid and water.

6Bring to a boil, reduce heat and simmer, covered, 30 minutes until chicken is tender.

7Add olives and salted lemons.

8Cover and simmer 4 to 5 minutes.

9To serve, arrange chicken on deep platter.

10Pour sauce over chicken and serve with rice.
