- 1 pound calves liver
- 1 1/2 tbsp. suet
- 1/2 tbsp. pork fat
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 c. cracker crumbs
- 2 Large eggs
- 1 teaspoon minced parsley
- Dash marjoram
- 1/8 teaspoon nutmeg
- 1 minced onion
- 2/3 c. flour (approx.)
Directions

1Wipe liver and put through food chopper with suet.

2Add in salt and pepper.

3Add in cracker crumbs, well beaten Large eggs, parsley, marjoram, nutmeg, onion that has been browned in fat and sufficient to hold mix together.

4Drop by spoonfuls into boiling salted water or possibly soup stock.

5Cook 10 min with cover off.

6Cover and cook 10 min longer.
