Mother's Liver Dumplings Recipe

Ingredients

  • 1 pound calves liver
  • 1 1/2 tbsp. suet
  • 1/2 tbsp. pork fat
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 c. cracker crumbs
  • 2 Large eggs
  • 1 teaspoon minced parsley
  • Dash marjoram
  • 1/8 teaspoon nutmeg
  • 1 minced onion
  • 2/3 c. flour (approx.)

Directions

    Wipe liver and put through food chopper with suet.

    Add in salt and pepper.

    Add in cracker crumbs, well beaten Large eggs, parsley, marjoram, nutmeg, onion that has been browned in fat and sufficient to hold mix together.

    Drop by spoonfuls into boiling salted water or possibly soup stock.

    Cook 10 min with cover off.
  6. 6
    Cover and cook 10 min longer.
