  • 4 to 5 eggplant, unpeeled
  • 3 large onions, chopped
  • olive oil
  • 2 cloves garlic, minced
  • 2 lb. lean beef or lamb, ground
  • 1 (8 oz.) can tomato sauce (more, if needed)
  • salt and pepper
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 3 c. milk
  • 3 eggs, well beaten
  • 2 c. (8 oz.) grated Muenster cheese
  • 1 c. dry bread crumbs

Directions

    Slice eggplant crosswise, 1/2-inch thick.

    To remove bitter taste, salt both sides of slices and place in a colander. Top with a heavy object to drain. Pat dry with paper towels.

    Place slices on foil lined baking sheet.

    Brush both sides with oil and brown under broiler.

    Line bottom of baking pan with eggplant slices.
