Ingredients
- 1 eggplant, peeled and sliced
- 1 lb. ground beef or lamb
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 (1 lb.) can tomatoes
- 1/2 tsp. oregano
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. olive oil
- 1/2 c. cottage cheese
- 2 eggs, beaten
- nutmeg
Directions

1Saute meat, onion and garlic until meat is brown.

2Drain well. Add tomatoes, oregano, salt and pepper.

3Simmer 10 minutes. Brush eggplant with olive oil and broil for 5 minutes on each side.

4Make layers of eggplant and meat sauce in greased casserole.

5Top with cottage cheese and eggs beaten together. Sprinkle with little nutmeg.

6Bake in 350° oven for 2 hours. Serves 4.
