  • 2 (1 lb.) eggplants, peeled and cut into 1/4 to 1/2-inch thick slices
  • 1/4 c. cooking oil
  • 2 lb. ground lamb or beef
  • 1 c. chopped onion (large)
  • 1 clove garlic, minced
  • 1 (8 oz.) can tomato sauce
  • 3/4 c. dry red wine
  • 2 Tbsp. snipped fresh parsley
  • 3/4 tsp. salt
  • 1/4 tsp. dried oregano, crushed
  • 1/4 tsp. ground cinnamon
  • 1 beaten egg
  • 1/4 c. margarine or butter
  • 1/4 c. all-purpose flour
  • 1/2 tsp. salt
  • dash of pepper
  • 2 c. milk
  • 3 eggs
  • 1/2 c. grated Parmesan cheese
  • ground cinnamon
  • snipped fresh parsley (optional)

    Brush both sides of eggplant slices with the oil. In a large skillet, brown eggplant slices over medium heat about 2 minutes per side. Drain; set aside.
