- 1 c. shredded Mozzarella cheese
- 3 Tbsp. Parmesan cheese
- 1/2 c. mayonnaise
- 3 Tbsp. finely chopped onion
Directions

1The skins of baking potatoes work best.

2Wash potatoes well; bake; slice in half lengthwise and scoop them out, saving inside for mashed potatoes and leaving the skin intact.

3Preheat oven to 475° and grease a baking sheet.

4Slice the skins into strips lengthwise; brush with melted butter, arranging the skins on the sheet.

5Bake until crisp.

6Sprinkle with salt and serve as is.

7Do not wrap potatoes in foil to bake.
