Muenster Mashed Potatoes

- 1 lb. red new potatoes, scrubbed and halved
- 4 Tbs. butter
- 3/4 cup heavy cream
- 1 cup muenster cheese, grated
- salt and pepper to taste
Directions

1Cover potatoes in a pot with cold water and salt the water.

2Set over high heat and bring up to a boil.

3Lower and simmer gently for 15-20 minutes until tender.

4Drain potatoes through a colander and return them to pot.

5The heat from the pot will dry out any residual water on the potatoes.

6With a hand-held electric mixer, start to beat potatoes.

7Add butter, cream and cheese and continue beating until pretty smooth.

8Season to taste with salt and pepper.

9Garnish with fresh chopped chives if desired.
