Muffaletta Pizza

- 3- 3/4 cups Bread Flour
- 2- 1/2 teaspoons Active Dry Yeast
- 3/4 teaspoons Table Salt
- 3/4 teaspoons Plus A Pinch Of Sugar
- 1-13 cup Room Temperature Water
- 1- 1/2 cup Shredded Mozzarella Cheese
- 1/2 cups Store Bought, Or Homemade Giardiniera
- 3 slices Hot Capicola (deli Meat)
- 3 slices Salami
- 3 slices Mortadella
- 3 slices Sopressata

1Note: The dough recipe makes enough for 3 pizzas.

2The pizza ingredients list is enough for one pizza.

3So you can save the extra dough to make different types of pizzas, or triple the pizza ingredients to make 3 Muffaletta Pizzas.

4For the dough: I use my KitchenAid for this process to keep everything in the bowl during the rising process.

5But you dont have to.
-
6Add the flour, yeast, salt, and sugar into a large bowl.

7Mix to combine.

8Add the water, and with your mixer, wooden spoons, or your hands, mix until blended.

9This will take about 30 seconds.

10The dough should be a bit stiff.

11Cover the bowl with a towel, and let it sit at room temperature until the dough has doubled in volume, about 2 hours.

12Once risen, divide dough into three portions.

13With one of the portions, add some flour to a large pastry board, and start rolling it out into your desired pizza shape.

14If you are adventurous, try tossing the pizza, to get your desired thickness.

15Preheat your oven to 500 F with the pizza stone inside.

16Once pre-heated, remove the pizza stone from the oven.

17Lay the dough onto the pizza stone, and top with half of the cheese, then spread out the giardiniera.

18Layer the sliced meats on top of the giardiniera, arranging them much like you would pepperoni.

19Top with the remaining cheese, and place in the oven.

20Bake for about 20-25 minutes.

21Remove it from the oven and let pizza cool for about 5 minutes before slicing into it.

22Then dig in.

23At first glance you might think, hmmm, just an ordinary pizza.

24But when biting into it you get all sorts of amazing flavors.

25The subtle heat from the heated giardiniera is balanced by those slightly crisp Italian cold cuts.

26I did not let my wife know what she was eating just to get her reaction.
