- 1 c. milk
- 1/4 c. oil
- 2 c. flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 egg
Directions

1Preheat oven to 400°.

2Place oven rack in the center of oven for better heat distribution.

3Lightly grease or place paper baking cups in muffin tins.

4In a large mixing bowl, combine egg, milk and oil.

5Set this bowl aside.

6In separate bowl, combine flour, sugar, baking powder and salt.

7Stir with fork.

8Make a well in the middle of dry ingredients and put wet ingredients in. Mix until moistened.

9Batter should be lumpy.

10Bake 20 to 25 minutes or until golden brown.

11Remove from pan immediately. Makes 10 to 12 muffins.
