- 2 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbsp. sugar
- 1 c. milk
- 3 Tbsp. melted shortening
- 1 egg, well beaten
Directions

1Sift together flour, baking powder, salt and sugar.

2Sift into bowl and make a well in the center.

3Beat egg; add shortening and milk.

4Pour liquid into well and stir until flour is moistened. Batter will be stiff; do not overbeat mixture.

5Fill greased muffin tins about 1/2 full.

6Bake 20 to 25 minutes in 425° oven until lightly browned.

7Test for doneness with toothpick.

8Serve hot with butter.

9Makes 12 muffins.
