- 1 c. whole wheat flour
- 1 c. sifted all-purpose flour
- 1/2 tsp. salt
- 2 1/2 tsp. baking powder
- 3 Tbsp. sugar
- 1 egg or 2 egg whites or substitute equivalent to 1 egg
- 1 c. skim milk
- 1/2 c. oil
Directions

1Grease muffin tin lightly with oil.

2Sift flour together with salt, baking powder and sugar.

3Add egg, milk and oil.

4Stir quickly, only until barely blended.

5Do not beat.

6Fill each tin to 2/3 full of batter.

7Bake at 425° for 20 to 25 minutes.

8Yield: 12 (2 1/2-inch) muffins.
