- 2 c. unbleached all-purpose flour
- 1 Tbsp. baking powder
- 2 Tbsp. granulated sugar
- 1 tsp. salt
- 1 large eg
- 1 c. milk
- 1/2 c. vegetable oil
Directions

1Grease 12 (2 1/2-inch) muffin cups.

2Heat oven to 400°.

3Sift flour, baking powder, sugar and salt into a medium-sized bowl. Stir to mix well.

4In a small bowl beat egg with a fork.

5Add milk and oil.

6Add all at once to dry ingredients.

7Stir mixture only until dry ingredients are moistened.

8Batter will be lumpy.

9Drop batter from a tablespoon into prepared muffin pans, filling each cup half to two-thirds full.

10Bake 15 to 20 minutes or until golden brown.

11Remove from pan and serve hot with butter, jam or marmalade.
