Ingredients

  • 1 cup apple juice
  • 12 cup pineapple juice (optional)
  • 1 orange
  • 12 lemon
  • 1 pinch ground cloves
  • 12 teaspoon ground cinnamon
  • 14 teaspoon ground ginger
  • 14 cup honey
  • 2 tablespoons butter
  • 14 cup cognac
  • 5 large apples

Directions

  1. 1
This recipe can be done in a microwave, but I don't own one; I am including stove top and microwave instructions.
  2. 2
In a large saucepan, mix apple and pineapple juices, zest from orange (I use a microplane), juice from orange, juice from lemon, spices, honey, butter and cognac.
  3. 3
Bring to a simmer over medium high heat.
  4. 4
Peel, core and coarsely chop apples.
  5. 5
    Add apples to simmering liquid.
  6. 6
Stir occasionally until apples begin to soften and break apart.
  7. 7
Using an immersion blender or a potato masher, blend or smash the apples to desired consistency.
  8. 8
Allow to cool, then store in the refrigerator.
  9. 9
Alton says the flavors of his original applesauce recipe improve in the days to follow.
  10. 10
Hopefully the same could be said for this!
  11. 11
Microwave Instructions: In microwaveable container, heat all ingredients, except apples.
  12. 12
Remove from microwave, stir in apples.
  13. 13
Return to microwave 10-20 minutes (depending on wattage) stirring halfway through cooking time.
