- 4 5- to 6-ounce mullet fillets, skin on
- 1 1/2 cups Jacks Old South Original Rub, or 1 recipe Basic Barbecue Rub (page 20)
- 1 medium onion, chopped
- 8 tablespoons (1 stick) unsalted butter, cubed
Directions

1Heat a smoker to 300 F.

2Place the fillets, skin side down, in a small aluminum baking pan.

3Coat the top of the fish with the rub.

4Cover the fish with the chopped onions and butter cubes.

5Cook for 30 minutes or until the flesh of the fish is tender.

6Remove and enjoy.
