- 1 1/2 Tbsp. finely minced onions
- 2 Tbsp. butter or margarine
- 1/2 c. finely chopped, cooked shrimp
- 4 Tbsp. grated Parmesan cheese, divided
- 3 Tbsp. dry bread crumbs
- 3 Tbsp. sherry, divided
- 3 tsp. parsley flakes
- dash of salt
- 12 very large or 24 small mushrooms, remove stems
- small whole cooked shrimp
Directions

1In a small skillet, saute onion in butter until tender. Remove from heat and stir in shrimp, 3 tablespoons each Parmesan and crumbs, 2 tablespoons sherry, the parsley and salt.

2Stuff mushroom caps with shrimp mixture.
