Mushroom Barley Tureen

Ingredients

  • 2 Tbsp. butter
  • 1/2 lb. fresh mushrooms
  • 1/2 c. diced onions
  • 1/2 c. diced celery
  • 1/2 c. diced carrots
  • 1 Tbsp. flour
  • 3 c. clear chicken broth
  • 1 to 2 c. cooked barley
  • 1/2 c. milk
  • 1 1/2 c. cooked chicken
  • salt and pepper to taste

    In a 3-quart saucepan, melt the butter.

    Add mushrooms, onions, celery and carrots.

    Cook over moderately low heat, stirring often for about 15 minutes.

    Stir in flour, then add broth.

    Cook, stirring constantly, until boiling.

    Prepare barley separately and drain.

    Add barley to pot and stir in milk, chicken, salt and pepper.

    Simmer.
