Mushroom Bisque

Ingredients
- 1/2 stick butter or margarine
- 4 shallots, chopped fine
- 1 lb. thin sliced fresh mushrooms or 1 large jar
- 1 Tbsp. all-purpose flour
- 2 c. chicken broth
- 1 pt. half and half
- dash of nutmeg
- 1 c. crabmeat, drained
- salt and pepper to taste
Directions

1Melt butter in saucepan; add onion and mushrooms; saute until tender.

2Add flour, stir constantly until smooth.

3Continue cooking for 1 minute.

4Combine chicken broth, half and half and nutmeg; gradually add to mushroom mixture, stirring constantly. Stir in remaining ingredients, reduce heat.

5Cook until thoroughly heated, stirring frequently.

6Do not boil!

7Makes 8 cups.
