- 1/2 c. chopped onion
- 1/2 lb. sliced mushrooms
- 2 oz. sharp Cheddar
- 3 Tbsp. sour cream
- 3 Tbsp. unsalted butter
- 1/3 c. Tawny Port
- 4 oz. cream cheese at room temperature
Directions

1Cook onion in butter until softened.

2Add the mushrooms and cook until almost all the liquid is evaporated.

3Add the Port and cook over high heat until all the liquid is evaporated.

4Season with salt and pepper and let cook to room temperature.

5In processor, grind Cheddar; add cream cheese and sour cream and blend until smooth.

6Add mushrooms and process until fine.

7Makes 45 mushrooms caps.
