  • 1/2 c. chopped onion
  • 1/2 lb. sliced mushrooms
  • 2 oz. sharp Cheddar
  • 3 Tbsp. sour cream
  • 3 Tbsp. unsalted butter
  • 1/3 c. Tawny Port
  • 4 oz. cream cheese at room temperature

Directions

    Cook onion in butter until softened.

    Add the mushrooms and cook until almost all the liquid is evaporated.

    Add the Port and cook over high heat until all the liquid is evaporated.

    Season with salt and pepper and let cook to room temperature.

    In processor, grind Cheddar; add cream cheese and sour cream and blend until smooth.

    Add mushrooms and process until fine.

    Makes 45 mushrooms caps.
