- 1/2 lb. fresh mushrooms
- 2 Tbsp. butter
- 1 Tbsp. chopped chives or spring onions
- salt and pepper
- 1 Tbsp. sherry
- 2 Tbsp. dry white wine
Directions

1Melt butter; as it begins to foam, add mushrooms and salt. Stir constantly for 3 minutes.

2Add pepper, sherry and additional butter if needed.

3As juice begins to come from mushrooms, remove them to a warm dish.

4Add wine to deglaze pan and boil down.

5Pour over mushrooms and serve.
