- 1 Tablespoon Butter
- 1 Tablespoon Olive Oil
- 4 ounces, weight Sliced Mixed Mushrooms
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 4 whole Whole Wheat Flatbreads (7 Inch)
- 4 ounces, weight Fresh Mozzarella, Thinly Sliced
- 1 teaspoon Chopped Fresh Thyme
- 2 whole Green Onions, Thinly Sliced (white And Green Parts)
- 2 teaspoons White Truffle Oil
- 2 Tablespoons Grated Parmesan Cheese
Directions

1Preheat oven to 400 degrees F.

2In a 10-inch skillet, melt butter with olive oil over medium heat.

3Add mushrooms and saute them until browned, about 10 minutes.

4Season with salt and pepper and remove pan from heat.

5Lay out flatbreads.

6First, using a pastry or barbeque brush, coat them with the leftover butter and oil from the pan of mushrooms.

7There should be just enough to lightly coat the flatbreads.

8If not, drizzle 1 teaspoon of olive oil over the top of each flatbread.

9Top each flatbread with mozzarella cheese, mushrooms, a sprinkle of thyme, and green onions.

10Bake pizzas at 400 degrees F for 510 minutes, or until cheese is melted.

11Drizzle truffle oil over the top of the flatbread (about 1/2 teaspoon per pizza).

12Sprinkle Parmesan cheese over the top, slice, and serve.
