Mushroom Marinade

Ingredients
- 1/2 c. olive oil
- 1/2 c. white wine vinegar
- 1 crushed clove garlic
- 1/2 tsp. salt
- 1/2 tsp. oregano
- dash of Tabasco sauce
Directions

1Place all ingredients in a large bowl and beat with a fork. After thoroughly mixing marinade, place chilled and drained mushrooms in the bowl with marinade.

2Leave overnight in bowl and stir a couple of times so that mushrooms will be thoroughly covered and coated with marinade.

3Place in quart jar next day and pour marinade over.

4Cut stems off mushrooms even with caps.

5Drop caps into boiling water (salted) and 1 tablespoon of vinegar.

6Take out when water begins to boil again.

7Drain and plunge into cold ice water.

8Chill and drain before adding marinade.
