Mushroom Oven Rice

  • 1 c. uncooked rice
  • 1/4 c. butter
  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 1 c. sliced mushrooms
  • 1 can chicken broth
  • 1/3 c. water
  • 1 - 2 Tbsp. soy sauce

Directions

    Saute the rice in butter

    for 2 minutes or until golden brown. Add celery and onion; cook and stir for 2 minutes more. Add mushrooms; cook and stir until the celery is tender. Transfer to a greased 1 1/2 qt. baking dish. Stir in remaining ingredients. Cover and bake at 350 degrees for 45-50 minutes or until liquid is absorbed and rice is tender.
