  • 3 Tbsp. butter
  • 1 lb. fresh mushrooms, cleaned and diced
  • 1 small onion, finely chopped
  • 24 oz. cream cheese, softened
  • 2 egg yolks
  • 3 Tbsp. minced parsley
  • salt and pepper to taste
  • party bread slices
  • paprika to taste

Directions

    In a medium size skillet, melt butter and saute mushrooms and onion over medium heat until golden, stirring occasionally; drain. Heat broiler.

    In a medium size bowl, beat cream cheese, egg yolks, parsley and seasonings together until smooth.

    Stir in mushroom mixture until combined.

    Spread evenly on party bread slices and sprinkle with paprika.

    Broil 1 to 2 minutes or until lightly browned and puffed.

    Serve immediately.
