- 2 c. chopped mushrooms
- 1 c. saltine crackers
- 1 c. scallions
- 1 1/2 c. Swiss cheese
- 3 eggs
- 1 c. cottage cheese
- dash of basil, thyme, cayenne pepper and paprika
Directions

1Saute 2 cups chopped mushrooms and 1 cup saltine crackers (crushed).

2Remove from pan and press into 9-inch pie plate to form crust.

3Saute 1 cup scallions and place on crust.

4Grate 1 1/2 cups Swiss cheese and place on top of scallions.

5Blend together 3 eggs, 1 cup cottage cheese, basil, thyme and cayenne pepper.

6Pour mixture into pie plate and sprinkle paprika on top.

7Bake at 325° for 25 to 35 minutes.

8Remove from oven; wait 10 to 15 minutes before cutting.
