Mushroom Quiche

Ingredients

  • 2 Tbsp. butter
  • 8 oz. sliced mushrooms (fresh or canned)
  • 3 eggs
  • 1 medium onion, minced
  • 1/2 c. milk
  • 8 oz. Edam cheese, grated
  • 4 slices bacon, cooked and crumbled
  • parsley
  • 1 pie shell crust

Directions

    Preheat oven to 400°.

    Saute mushrooms and onion in butter; place in bottom, of prebaked pastry shell.

    Add cheese (you may substitute Cheddar or Swiss).

    Beat eggs until frothy with electric mixer; gradually stir in milk.

    Pour on top of cheese. Sprinkle bacon and parsley on top.

    Bake at 400° for 20 minutes. Reduce heat to 350° and continue baking for 15 minutes on a cookie sheet.

    Cool 10 minutes before serving.
