Mushroom Quiche

Ingredients
- 2 Tbsp. butter
- 8 oz. sliced mushrooms (fresh or canned)
- 3 eggs
- 1 medium onion, minced
- 1/2 c. milk
- 8 oz. Edam cheese, grated
- 4 slices bacon, cooked and crumbled
- parsley
- 1 pie shell crust
Directions

1Preheat oven to 400°.

2Saute mushrooms and onion in butter; place in bottom, of prebaked pastry shell.

3Add cheese (you may substitute Cheddar or Swiss).

4Beat eggs until frothy with electric mixer; gradually stir in milk.

5Pour on top of cheese. Sprinkle bacon and parsley on top.

6Bake at 400° for 20 minutes. Reduce heat to 350° and continue baking for 15 minutes on a cookie sheet.

7Cool 10 minutes before serving.
