Ingredients

  • 9 inches pie shell
  • 2 tablespoons green onion Minced
  • 2 tablespoons butter
  • 1/2 pound fresh mushrooms sliced
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 3 eggs beaten
  • 1 1/2 cups light cream
  • 1/8 teaspoon nutmeg
  • pepper to taste
  • 1 cup shredded swiss cheese

Directions

    Preheat oven to 375 degrees. In medium skillet saute onion and butter for 2 minutes. Add mushrooms, lemon juice and salt and saute until liquid evaporates. Set aside.

    In large bowl mix eggs, cream, nutmeg and pepper thoroughly. Stir in mushroom mixture and cheese. Pour into pastry shell and bake at 375 degrees for 30-35 minutes or until knife inserted 1 inch from edge comes out clean.

    Let stand for 15 minutes before serving.
