Mushroom Rice

  • 1 small onion, chopped
  • 1/3 c. margarine
  • 1 (6 oz.) can chopped mushrooms
  • 1 c. uncooked long grain rice
  • 1 (10 1/2 oz.) can beef consomme (Campbell's soup)
  • 3/4 c. water
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Saute onion in melted margarine.

    Add mushrooms, rice, consomme, water, salt and pepper.

    Pour into greased 2-quart dish. Cover; bake for 1 hour at 350°.
