Mushroom Rice

  • 1 c. raw rice
  • 1 c. sliced green onions, including the tops
  • 1 Tbsp. olive oil
  • 1 c. sliced mushrooms
  • 1 1/2 c. chicken broth
  • 1/2 c. dry sherry
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    Grease a 1 1/2 or 2-quart casserole.

    Sprinkle in the raw rice.

    Saute the green onions in the olive oil until they are soft.

    Add the remaining ingredients.

    Bring to a boil and then pour over the rice and stir.

    Cover the casserole and bake 25 to 30 minutes at 375° until the rice is tender.
