- 2 teaspoons butter
- 6 each mushrooms coarsely chopped
- 1 clove garlic minced
- 1 bunch scallions, spring or green onions finely chopped
- 2 cups chicken broth
- 2 cups rice white, uncooked
- 1 tablespoon parsley leaves fresh, chopped
- 1 x salt and black pepper salt and pepper, to taste
Directions

1Melt butter in a saucepan over medium heat.

2Cook mushrooms, garlic and green onion until mushrooms are cooked and liquid has evaporated.

3Stir in chicken broth and rice.

4Season with parsley, salt and pepper.

5Reduce heat, cover and simmer for 20 minutes.
