  • 2 tablespoons butter
  • 14 cup chopped onion
  • 12 cup chopped green bell pepper
  • 1 (8 ounce) can sliced mushrooms
  • 1 cup rice
  • water

Directions

    Melt butter in a saucepan.

    When foaming subsides, add onion and green pepper.

    Saute until limp and onion is translucent.

    Drain liquid from mushroom can into 2-cup measure.

    Add water to bring volume up to 2 cups.

    Add mushrooms to saucepan and saute 1 minute.

    Add rice and liquid.

    Cover tightly and cook 30 min or until rice is tender.
