- 2 tablespoons butter
- 14 cup chopped onion
- 12 cup chopped green bell pepper
- 1 (8 ounce) can sliced mushrooms
- 1 cup rice
- water
Directions

1Melt butter in a saucepan.

2When foaming subsides, add onion and green pepper.

3Saute until limp and onion is translucent.

4Drain liquid from mushroom can into 2-cup measure.

5Add water to bring volume up to 2 cups.

6Add mushrooms to saucepan and saute 1 minute.

7Add rice and liquid.

8Cover tightly and cook 30 min or until rice is tender.
