Mushroom Rice

  • 1 c. uncooked rice
  • 1/2 c. finely chopped green onion and tops
  • 2 Tbsp. butter
  • 1 tsp. salt
  • 1 (2 oz.) can sliced mushrooms, drained
  • 2 c. chicken broth

Directions

    Put rice and mushrooms in 1 1/2-quart casserole.

    Saute onion in butter until tender.

    Add broth and salt; bring to a boil.

    Pour over rice; stir well.

    Cover and bake at 375° for 25 minutes or until tender.
