- 1 yellow onion, chopped
- 8 oz. fresh mushrooms, sliced
- 1 1/2 Tbsp. oil
- 1 c. brown rice
- 2 1/2 c. vegetable or chicken broth
- parsley sprigs
- basil sprigs
- 1/3 c. walnuts, pecans or almonds
Directions

1In a heavy saucepan, saute onion and mushrooms in oil until soft and golden brown.

2Add rice.

3Saute for a few minutes until coated.

4Add broth.

5Bring to a boil.

6Cover.

7Cook over medium-low heat for about 40 minutes or until rice is cooked. Follow directions on package.
