Mushroom Roll-Ups

Ingredients
- 2 lb. fresh mushrooms, diced
- 1 c. butter
- 3/4 c. flour
- 1 Tbsp. salt
- 1 tsp. Accent
- 4 c. light cream
- 2 1/2 Tbsp. minced chives
- 4 tsp. lemon juice
- 4 sandwich loaves white bread, trimmed
Directions

1Peel mushrooms and dice, then saute for five minutes in butter.

2Blend in flour, salt and Accent.

3Stir in cream and simmer until thick.

4Add chives and lemon juice.

5Blend well. Remove crusts from bread and roll slices thin.

6Spread with mushroom mixture and roll up.

7Pack and freeze if desired.

8When ready to serve, defrost; cut each roll in half and toast on all sides in a 400° oven for about 20 minutes.
