Ingredients
- 1 loaf white bread, crusts removed
- 6 tsp. butter
- 2 Tbsp. flour
- 3 scallions (optional)
- garlic (optional)
- 1 Tbsp. parsley
- 1/2 tsp. salt
- 1 Tbsp. chives
- 1/2 to 3/4 lb. fresh mushrooms
- 1 pt. heavy cream
- 1/2 tsp. lemon juice
- 1/2 tsp. red pepper (optional)
Directions

1Toast bread rounds.

2Cook scallions in butter until soft.

3Add chopped or ground mushrooms and cook over low heat until water is evaporated.

4Sprinkle with flour, stirring to blend.

5Continue cooking.

6Add cream and cook until very thick.

7Stir as necessary. Remove from heat when thick; add all remaining ingredients.

8Cool. Spread over rounds.

9Sprinkle with Parmesan cheese.

10Bake at 400°. Freezes well.
