Mushroom Salad

Ingredients

  • 1 lb. fresh mushrooms
  • 1/2 c. water
  • 3 Tbsp. sour cream
  • 3 Tbsp. mayonnaise
  • 1/8 tsp. each thyme and tarragon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • 1 head leaf or Boston lettuce
  • paprika

Directions

    Wash mushrooms and discard stems; slice thinly.

    Place mushrooms and water in a small saucepan.

    Bring water to boil and reduce heat.

    Cover and steam for 2 to 3 minutes.

    Drain well. Combine mushrooms, sour cream, mayonnaise, thyme, tarragon, ginger and salt.

    Chill until ready to serve.

    Spoon over leaf lettuce; sprinkle lightly with paprika.
