Mushroom Soup

Ingredients
- 1/4 c. clarified butter
- 1 thinly sliced onion
- 1/4 c. tomato paste
- 2 c. mushroom caps, sliced (more if desired)
- wine (to taste)
- 1/4 c. olive oil
- 1 clove garlic, smashed
- 24 oz. chicken broth
- 2 egg yolks
- 2 Tbsp. chopped parsley
Directions

1Put butter, oil, onion and garlic together.

2Cook until onions are transparent.

3Remove garlic.

4Add the tomato paste and mushrooms.

5Cook 5 minutes.

6Add broth and simmer until mushrooms are cooked, about 10 minutes.

7Mix yolks and parsley together, then add to soup.

8Add wine to soup to taste.

9Don't allow soup to boil once eggs have been added.
