Mushroom Soup

Ingredients

  • 1/4 c. clarified butter
  • 1 thinly sliced onion
  • 1/4 c. tomato paste
  • 2 c. mushroom caps, sliced (more if desired)
  • wine (to taste)
  • 1/4 c. olive oil
  • 1 clove garlic, smashed
  • 24 oz. chicken broth
  • 2 egg yolks
  • 2 Tbsp. chopped parsley

Directions

    Put butter, oil, onion and garlic together.

    Cook until onions are transparent.

    Remove garlic.

    Add the tomato paste and mushrooms.

    Cook 5 minutes.

    Add broth and simmer until mushrooms are cooked, about 10 minutes.

    Mix yolks and parsley together, then add to soup.

    Add wine to soup to taste.

    Don't allow soup to boil once eggs have been added.
