Mushrooms on Toast

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 shallots, finely diced
  • 1 garlic clove, finely chopped
  • 6 ounces button mushrooms
  • 14 cup white wine
  • 1 sprig thyme, plus more (to garnish)
  • 2 thick slices whole wheat or 2 country bread
  • butter
  • salt and pepper

Directions

    Gently cook the shallots in the olive oil 2 minutes; add the garlic and cook a minute more.

    Add the mushrooms and toss them to coat.

    Add the wine, thyme and salt and cook until mushrooms are cooked through.

    Toast the bread on both sides; spread with butter.

    Season the mushrooms with pepper and more salt if needed.

    Pile them on the toast thickly.

    Top with fresh thyme if using.

    NOTE: You can add a spoonful of mascarpone cheese to the toast with the butter if you're feeling indulgent.
