Mushrooms on Toast

Ingredients
- 1 tablespoon extra virgin olive oil
- 2 shallots, finely diced
- 1 garlic clove, finely chopped
- 6 ounces button mushrooms
- 14 cup white wine
- 1 sprig thyme, plus more (to garnish)
- 2 thick slices whole wheat or 2 country bread
- butter
- salt and pepper
Directions

1Gently cook the shallots in the olive oil 2 minutes; add the garlic and cook a minute more.

2Add the mushrooms and toss them to coat.

3Add the wine, thyme and salt and cook until mushrooms are cooked through.

4Toast the bread on both sides; spread with butter.

5Season the mushrooms with pepper and more salt if needed.

6Pile them on the toast thickly.

7Top with fresh thyme if using.

8NOTE: You can add a spoonful of mascarpone cheese to the toast with the butter if you're feeling indulgent.
