Mushrooms With Cucumbers

  • 4 1/2 c. sliced, fresh mushrooms
  • 2 small cucumbers, seeded and cut into julienne strips
  • 1 medium onion, thinly sliced
  • 1/4 c. butter
  • 1/3 c. condensed chicken broth
  • 1/4 c. sour cream
  • 1 tsp. flour
  • 1 Tbsp. parsley

Directions

    In skillet, cook mushrooms, cucumbers and onion in butter for 5 to 6 minutes or just until tender, stirring occasionally. Remove from heat.

    In a bowl, stir flour into the sour cream. Gradually stir chicken broth and parsley into sour cream mixture. Pour over vegetables.

    Heat through over low heat, stirring constantly.

    Serve immediately.
