  • 2 c. muskmelon (yellow), stewed
  • 1 Tbsp. butter
  • 2 Tbsp. cornstarch
  • 1/4 tsp. nutmeg
  • 1/2 c. sugar
  • 2 egg yolks, well beaten
  • 2 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 c. sugar

Directions

    Cook and mash the melon. Add 1/2 cup sugar, cornstarch, nutmeg, butter and well beaten egg yolks.

    Cook over low heat until thick.

    Add filling to baked 8-inch pie crust.

    Beat egg whites and cream of tartar until frothy.

    Continue beating until stiff and glossy.

    Cover filling with meringue and bake 8 to 10 minutes in 400° oven.
