Mustard Beets

Ingredients

  • 3/4 c. sugar
  • 1/2 c. vinegar (white)
  • 2 cans beets, sliced and drained
  • 1/2 tsp. instant onion, minced
  • 3 Tbsp. mustard, prepared
  • 1/4 tsp. salt

Directions

    Bring to a boil all ingredients, except beets, until sugar is dissolved (use wire whisk to mix in mustard).

    Add beets.

    (I sometimes put in slices of sweet onion too.)

    Simmer, uncovered, 5 minutes.

    Cool and put in jars and refrigerate.
