  • 1 (2 1/4 lb.) lean beef brisket
  • 1 Tbsp. vegetable oil
  • 4 c. water
  • 1/3 c. Dijon mustard
  • 2 tsp. dried whole thyme
  • 3/4 tsp. pepper
  • 1/2 tsp. salt
  • 4 cloves garlic, minced
  • 2 1/2 c. sliced carrots
  • 5 small round red potatoes, peeled and halved
  • 1 large onion, quartered
  • 2 1/2 Tbsp. cornstarch
  • 1/4 c. water

    Trim fat from brisket.

    Heat oil in a 6-quart pressure cooker over medium-high heat until hot.

    Add brisket and brown all sides.

    Add water and next five ingredients.

    Close lid securely. Bring to high pressure over high heat, about 4 minutes.

    Adjust heat to medium-low or level needed to maintain high pressure. Cook 45 minutes.
