- 2 lb. lean beef bone-in chuck steak, about 3/4-inch thick
- 2 Tbsp. lemon juice
- 2 Tbsp. olive or vegetable oil
- 1 Tbsp. Dijon mustard
- 1/4 tsp. pepper
- 2 Tbsp. water
Directions

1Pierce beef on both sides with fork.

2Place beef in glass or plastic dish.

3Mix lemon juice, oil, mustard and pepper; pour over beef.

4Cover and refrigerate at least 4 hours, turning occasionally.

5Remove beef from marinade; reserve marinade.

6Place beef on rack in broiler pan.

7Set oven control to broil.

8Broil beef with top about 3 inches from heat about 10 minutes on each side or until medium doneness.

9Heat the reserved marinade and water to boiling in 1-quart saucepan, stirring occasionally; pour over beef and serve.
