- 4 small halibut steaks, 1-inch thick
- 1/2 tsp. pepper
- 2 Tbsp. margarine or butter, melted
- 2 egg whites
- 1/4 c. grated Parmesan cheese
- 2 Tbsp. Dijon style mustard
- 2 Tbsp. chopped green onions (with tops)
Directions

1Sprinkle fish steaks with pepper.

2Place fish on rack in broiler pan; brush with 1 tablespoon of the margarine.

3Set oven control to broil.

4Broil fish with tops 2 to 3 inches from heat until light brown, about 5 minutes.

5Turn; brush with remaining margarine.

6Broil until fish flakes easily with fork, 5 to 8 minutes.

7Beat egg whites until stiff, but not dry.

8Fold in cheese, mustard and onions.

9Spread mixture over fish.

10Broil until tops are golden

11brown, about 1 1/2 minutes.
