Ingredients
- 2 1/2 c. flour
- 2 c. sugar
- 1 1/2 tsp. ground cinnamon
- 1 tsp. each: baking powder, baking soda and salt
- 1 1/2 c. vegetable oil
- 4 slightly beaten eggs
- 3 (4 oz.) jars strained carrots (baby food)
- 1 c. chopped nuts
Directions

1Grease a 15 x 10 x 1-inch baking pan; set aside.

2Combine flour, sugar, cinnamon, baking powder, baking soda and salt.

3Add oil, eggs and carrots.

4Beat with an electric mixer until combined.

5Stir in nuts.

6Pour into prepared pan.

7Bake in a 350° oven about 30 minutes.

8Cool in pan on wire rack.

9Frost with a cream cheese frosting of choice or merely dust with confectioners sugar.

10Store bars, covered, in refrigerator.

11Yield: 24 bars.
