- 2 teaspoons cinnamon
- 12 teaspoon salt
- 1 12 cups sugar
- 12 cup currants (raisins)
- 12 cup coconut
- 12 cup nuts
- 1 cup canola oil
- 3 eggs
- 2 cups carrots, grated
Directions

1Preheat oven to 350.

2Mix dry ingredients.

5Mix oil and carrots and add to dry.

7Put in loaf pan (or any shape you want).

8Let it stand for 20 minutes.
