Ingredients

  • 2 to 3 lb. stew beef
  • 1 medium onion
  • 1 medium green pepper
  • 3 cloves garlic
  • 3 Tbsp. olive oil
  • 1 Tbsp. sugar
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 to 8 tsp. chili powder
  • 2 cans whole tomatoes (28 oz.)
  • 1 can tomato paste (12 oz.)
  • 2 cans kidney beans (15 oz.)

Directions

    Cut or chop stew beef into 1/4-inch cubes.

    Mix with chopped onion and green pepper.

    Add garlic and olive oil; brown in skillet.

    Add balance of ingredients, except kidney beans, in slow cooker, along with meat and simmer for 4 hours.

    Add kidney beans and simmer additional 2 hours.

    Serve.
