Ingredients
- 2 Tablespoons Unsalted Butter
- 1- 1/4 cup Onion, Finely Diced
- 1- 1/4 cup Mushroom, Finely Chopped
- 1/2 cups Celery, Finely Diced
- 1 whole Red Bell Pepper, Finely Chopped
- 1 pinch Salt And Pepper, to taste
- 1 teaspoon Dried Thyme
- 6 cloves Garlic, Minced
- 1/2 cups Carrot, Finely Chopped
- 1 cup Fresh Bread Crumbs
- 1/2 cups Half-and-half
- 2 whole Eggs
- 1- 1/2 pound Ground Beef
- 12 ounces, weight Packaged Hot Sausage
- 1- 3/4 teaspoon Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 1/2 cups Ketchup
- 2 Tablespoons Brown Sugar
- 2 teaspoons Apple Cider Vinegar
Directions

1Preheat oven to 350 degrees.

2In large skillet heat butter until melted and foaming.

3Add onions, mushrooms, celery and red bell pepper.

4Season to taste with salt and pepper.

5Cook for a few minutes, being careful to not brown.

6Sprinkle thyme over onion mixture.

7Add garlic.

8Cook and stir until onions are tender and translucent.

9Stir in chopped carrot and remove from heat.

10Cool completely.

11Meanwhile, soak the bread crumbs in the half-and-half.

12Beat eggs.

13In a large mixing bowl combine meats.

14Once mixed, combine with the cooled vegetables, bread crumb mixture and eggs.

15Add the 1-3/4 teaspoons of salt and 1/2 teaspoons of ground black pepper.

16Using your hands, mix until well blended.

17Put this mixture into your baking dish and shape into loaf(s).

18For ketchup topping: combine ketchup, brown sugar and vinegar.

19Spoon over top of meat loaf.

20Bake on middle rack for one hour.

21Let rest for ten minutes before slicing.
