My Pulled Pork

Ingredients

  • 5 # pork butt or shoulder roast
  • 2 medium onions chopped
  • 3 cloves garlic minced
  • 2 T chili powder
  • 1 T cumin
  • 2 t smoked paprika
  • 1 t cayenne
  • salt and pepper to taste
  • Sauce:
  • 1/2 c ketchup
  • 2 T whole grain Dijon
  • 3T Worchestershire
  • 1/3 c dk brn sugar
  • 1 T liquid smoke
  • 12 oz beer

Directions

    Combine spices and mix. Rub spices on pork roast generously
  2. 2
    Put roast in bottom of crock pot on high. Put onions and garlic on top and pour beer over all. Cook 1 hour on high and all day or overnight on simmer.

    Remove pork and shred.

    Add Sauce ingredients to pot juices, taste, correct, and boil until reduced. Add pork back in and serve on buns with additional fried onions if desired.
