- 3 to 4 c. rhubarb
- 1 egg
- 3 Tbsp. flour
- 1 3/4 c. sugar
- 3 Tbsp. water
- pie crust for 9-inch pie
Directions

1Cut rhubarb in 1/4-inch slices.

2Place in bowl and add hot water from faucet.

3Let stand.

4Roll out pie crust and enough for lattice top.

5Mix together sugar, 3 tablespoons water and 3 tablespoons flour and egg.

6Beat until mixed.

7Drain rhubarb.

8Put in 9-inch crust lined pie pan.

9Pour sugar mixture over.

10Add lattice top crust.

11Bake 15 minutes at 415°, then 40 minutes at 375°.
