  • 3 cups cooked rice
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 cup frozen peas and carrot
  • 2 -3 tablespoons soy sauce
  • 2 eggs, lightly beaten
  • 2 tablespoons green onions, chopped

    Preheat large skillet with oil, add rice and warm throughout.

    add frozen peas & carrots warm throughout.

    make well in rice mixture, lightly scramble eggs and mix throughout.
